BBQ Breakfast Scramble

INGREDIENTS (2 servings):

  • Monstruo de Gila Sonoran Salsa

  • 3 medium sized potatoes

  • 1 bell pepper

  • 1/2 of a large yellow onion

  • 1 large clove of garlic

  • Bacon (or pulled pork)

  • 6 eggs

  • Shredded cheese (Mexican blend or cheddar)

  • 1 tbsp butter

  • Olive oil

  • Seasoning (salt, pepper, anything else you like- we used peach bourbon)

DIRECTIONS:

  1. Prepare ingredients (dice potatoes, bell pepper, onion, mince garlic)

  2. In a bowl toss potatoes with olive oil and seasoning

  3. Air fry potatoes at 350°F 15-18 mins or until lightly browned and crispy

  4. Cook bacon in a skillet over medium-high heat until crispy, turning often

  5. Heat a drizzle of oil over medium-high heat and add bell pepper, onion, and garlic

  6. Season and stir occasionally until tender and lightly browned

  7. In a bowl, whisk eggs, seasoning, and a handful of cheese

  8. Heat butter over medium heat and add egg mixture

  9. Cook, stirring and scraping the bottom and sides of skillet until cooked through

  10. Stir in veggies and add a layer of cheese, letting it melt slightly

  11. Serve with potatoes, bacon, and a generous drizzle of Sonoran Salsa.

  12. Enjoy!
